Vinification - The harvest was made at night in 12 kg boxes, in order to avoid crushing the grapes. We use carbonic maceration to achieve maximum extraction of colors and flavors from the fruit, followed by 15 days of fermentation in a controlled temperature environment. At the end, a gentle pressing precedes malolactic fermentation in French oak barrels. It is important to note that the entire transition process is achieved through the force of gravity.
Aged 12 months in French oak barrels, followed by more than a year in bottles and released in October 2018.
