Vinification - This wine was produced from ecologically grown indigenous grape varieties with full respect for the original terroir. The grapes are grown in a non-mechanized vineyard (about 0.5 ha) over 100 years old, a large co-plantation of different grape varieties, manual harvesting for small boxes. The natural vinification (co-fermentation) took place in an open "mill". In the case of white grapes, it was not destemmed. Stage 2 years in stainless steel vats.
Tasting Notes -Amazing aroma with fresh red futa and citrus notes. In the mouth it shows a lively character and a lot of freshness, with very elegant tannins and great aromatic complexity. Freshness and elegance combined with a very personalized character resulting from the presence of a great variety of grape varieties.
Service temperature 16º to 18ºC
Gastronomy - Mushroom risotto, game dishes, especially poultry.
