Oenology Team - Vines & Wines and António Lopes Ribeiro
Winemaking cultivated in an ecological way, completely respecting its original terroir. The grapes come from several vineyard plots with an average age of about 30/40 years, with granitic soils, privileged orientation to the south and average altitudes of 300 / 400m, located in Mouraz, municipality of Tondela. After a rigorous selection of the grapes still in the vineyard, they were transported to the winery in small perforated boxes. The natural vinification (by vine and not by grape variety) was made in stainless steel vats with temperature control, followed by a long maceration. Stage of the wine was aged in French oak barrels for 8 months.
Tasting Notes -Intense bouquet of ripe red fruits, blackberry, cassis and cherry also has aromas of forest and pine… a true blend of Dão. In the mouth it is vibrant, with firm mature tannins and a long finish.
Gastronomy - Perfect with grilled meat or in the oven. It also goes well with cheese.
