Vinification - This wine was produced in clay amphorae weighed with natural resin, reproducing the Roman process of 2000 years ago, to the detriment of modern epoxy paints which, unfortunately, are widely used today to waterproof amphoras. Produced from grapes harvested by hand and totally destemmed, the wine aged in the amphora in contact with the skins and lees, after fermentation with skin maceration. Unfiltered or stabilized wine.
