Vinification Produced from typical Dão grape varieties, cultivated in an ecological way, with absolute respect for their original terroir. The grapes come from a vineyard over 60 years old, located on the hillside of the Serra do Caramulo. The soil is granitic and the altitude is around 550m. The manual harvest was done in the first days of September. It fermented in a traditional wine press with the film for about 1 week, after which it was pressed and transferred to a stainless steel vat where the alcoholic and malolactic fermentation ended. All fermentation, post-fermentation and aging took place naturally, without the addition of yeasts, sulfites or other products.
